Dan turned his beer-making passion from a 15-year hobby into a career extending over a decade. He has brewed with multiple Central Texas area breweries and has a wealth of knowledge on many styles. In addition to his work in the brewery, Dan has acted in various capacities with local and national brewing industry associations, most recently as Texas Region President of the Master Brewers Association of America (MBAA) He holds an impressive collection of scotch and cigars, and was an avid follower of Formula 1 even before Drive to Survive. As Head Brewer, Dan is responsible for recipe development, product innovation, production oversight, and whatever else we can throw at him.
George Garcia wears many hats, predominantly Stetsons. He writes, produces music, DJs weddings with his wife, and is a member of several Austin area bands. As Taproom Manager and Sales Rep, George is responsible for putting glasses…and cans…in hands. He provides leadership for our beloved beertenders and is the face of the brewery to the growing list of local establishments where you can find Willard’s beer. He takes pride in providing Austin and the surrounding areas with delicious products and a Hell of a good time!
Austin was raised in Coppell, TX, a small suburb of Dallas, but has lived in Austin long enough to call it home. Aspiring musician turned chef, Austin spent much of his time growing up in the kitchen watching his mother cook. Her influence inspired his love for bold flavors and graceful presentation. Austin has spent several years now building and honing his expertise and has worked under a number of strong chefs whose credentials range from New York to Napa.
Kiki has been a staple in the Austin brew scene since 2014 when she started her career as part of the Packaging team at Independence Brewing. She worked her way to the cellar, then found her calling when she transitioned to the brewhouse in 2016 at Flix in Round Rock. She has been a key player in making GABF, World Beer Cup, and Best of Craft award winning beers. She is a Cicerone Certified Beer Server and has completed the MBAA Malting and Brewing Sciences course at the University of Wisconsin, Madison.
Ryan is an Austin native and longtime lover of craft beer and brewing. He was introduced to the art as a young man by his uncle Mike, a homebrewer of 40 years. He holds an MBA from the University of Texas and brings 15+ years of experience in production and operations management, most recently as Manager of Packaging and Supply Chain at Alamo Beer Co. in San Antonio, TX. Ryan’s focus in the role of Operations Director is to find efficiency gains throughout the production process, elevate quality standards, and act as “coach” to make sure everyone on the Willard’s Brewery team has the knowledge, skills, and resources to make world-class beer and seltzer.
